What we fix
The cold side of every store you run.
- Walk-in coolers and freezersCompressors, evaporator fans, door seals and defrost.
- Reach-in coolers and freezersOn the line and in the back.
- Prep tables and sandwich unitsThe rails your cooks reach into all shift.
- Under-counter and bar refrigerationThe small boxes that hold the most-used stock.
Signs your walk-in is about to fail
- It runs warmThe reading creeps past 40°F and the door is shut.
- Water on the floorA blocked drain or a coil that keeps icing and thawing.
- Ice on the coilAir can't move across it, so the box can't cool.
- It never stops runningThe unit works all day to hold the temperature.
- The power bill jumpsWith nothing else changed in the store.
A walk-in gives warnings before it goes down. Call when you see one, not when the box is warm.
Four hours for an emergency
The danger zone is 40°F to 140°F: cold food has to stay at 40°F or below, hot food at 140°F or above. Cold food above 40°F for more than four hours goes in the trash. We're on site within four hours for an emergency, so the stock still has a chance.
- 9:00 PMThe walk-in reads 42°F. You call.
- Under 4 hoursA technician is on site.
- 1:00 AMFood held above 40°F for four hours has to be thrown out.

- Door gaskets, hinges and temperatures checked on every walk-in and reach-in
- Evaporator fans and defrost checked before summer
